This weeks recipe comes from the second book mentioned in my CBC post last week that was full of epicness:
I've cooked several times out of this book already. I love it.
The one I am choosing to share for the cook book challenge is Chicken and Banana Squares.
Does that sound as repulsive to you as it did to me what I first saw it? Couple with the fact I hate cooked banana – why would anyone want to eat that with chicken?
It sounded so gross it made me insanely curious. I just had to try this.
The result was surprising.
The dish is basically a sandwich of chicken and banana, coated with breadcrumbs. The banana takes on an almost cheesy quality. I was surprised at how well it works in a savory dish. I was waiting for it to be disgusting. All any of us could talk about was how surprisingly epic it was.
You guys gotta try this recipe.

Chicken and Banana Squares
|2 chicken breast fillets
6 slices of bread
2 firm bananas
3 tablespoons milk
2 cups breadcrumbs
oil for deep frying
1. Remove crusts from bread, cut each slice into four squares. Remove skin and fillet chicken breasts; cut into similar sizes squares. Steam (or boil) and set aside to cool. Meanwhile, peel and slice the banana lengthwise into 4 'fillets'; cut these into similar sized squares.

I love chicken and banana or banana and mince – but I was born in Brazil where mixing it with food is common-ish.
Oh that’s really interesting. I’ve never seen the flavour combination here, or even seen bananas used in any savoury dish — my boyfriend usually shouts us dinner once a week and we go out to restaurants of all sorts of cuisine. Though I suppose what we get is the westernized version of everything.
It’s certainly something I’m keen to try more often!
These were so yummy. Just the right size and not too filling (to leave room for the next course). Although I probably could have just eaten a whole plate of these.
I’m sure. 😛 I reckon this could make a good party dish.
