12 Days of Christmas :: 3 Candle Cakes

I have such a love of candles. I own far too many candles that I never burn because I have some weird thing about keeping things looking new and never using them because reasons (I'm looking at you, 5 sets of Derwent pencils still wrapped in plastic). 

Once I inevitably get over this weird quirk and light them, I'm quickly captivated by them as the flame dances on their molten surface. I love their elegance, their ambiance and their beauty. I especially love their fragrance, be it from a scented candle or the smell of a wick just blown out. I also love the way they remind me of being a kid. I grew up in a household where money was variably present, and so we often had one or more of our utilities cut off. Of course, as a kid, you don't yet know the stress of money and bills so it's all just another adventure. Today we get to boil the water for our baths on the stove and read stories by candle light. There were a lot of candle light nights. Maybe it's because they bring me back to this time of personal innocence, or maybe it's just their intrinsic beauty, but I find them so calming. 

Candles also remind me of Christmas. They're my favourite centrepiece at Christmas dinner, though they look gorgeous adorning any occasion. Lit or unlit, they make the setting look beautiful. So when creating a list of baking for my 12 Days of Christmas, I just knew candles had to be featured.

12 Days of Christmas :: 2 Macarons

Macarons are one of those things I've always wanted to try but have been too intimidated to. I haven't even tasted one, let alone baked them. From the horror stories to the legends about how hard they are to bake correctly, I put it in the "one day" basket. I decided I was going to finally tackle this fickle beast for this Christmas. I spent many hours researching recipes and advice and all the what-to-dos and what-not-to-dos. The more I read, the more confused I became. There is so much conflicting information, sworn by recipes, refuted techniques. It's enough to make you want to throw in the towel.

After one such evening I finally closed my internet browser and decided that was enough. It's only a meringue. I can do meringue. I needed to just get in the kitchen and have a go.

Turns out, there's a whole lot of fuss about not much.    These are completely achievable…

Salted Peanut Caramel and White Chocolate Cheesecake

Last week I went out to dinner with mine and my boyfriend's immediate family to celebrate the completion of my Masters degree. We went to one of my favourite local restaurants, Azurea's and had a lovely time together. While Azurea's have a gorgeous selection of cakes and desserts themselves, I wasn't about to let go of an excuse to bake! Between mine and his family, everyone's preference for cake is many and varied, so choosing one is always a difficult task — someone is always not going to be happy! I eventually settled on this cake I had been wanting to try for quite a while now.

Mockaccino Fondant Puddings

Over on BakeBakeBake this month, the contest theme is coffee. I’d been thinking of attempting some chocolate fondant puddings for a while, so I used it as an excuse to give them a go, with a little coffee twist.

Fondant puddings are great for those of us who love to lick the bowl of cake mix clean just as much as we like to eat the finished product. Which covers most of us, really. Is there anyone whose list of childhood pleasures doesn’t consist of getting to lick the bowl/beaters/spatula clean? This little dessert lets us relive those glorious memories, while pretending to be sophisticated about it on the surface.

Triple Chocolate Ripple Joconde

Last Thursday was my sister's 21st birthday. It was a given that I was going to make the cake. I told her with a week to go to have a think about what sort of cake she wanted. She had no idea. It's harder to think of ideas when you're not a baker – you're much less aware of the possibilities. 

A few days out I became resigned to having to work it out myself. Almost as soon as I came to this resolution, she piped up with, "I know what I want! A chocolate ripple cake!"

". . . really?" I replied. 

My heart sunk a little. I'd been looking forward to the opportunity to create something whimsical, test some new skills, have some license to create. Of all the things I could make, she chose the easiest cake in the entire world.

Well, the birthday girl has to get what she wants. But, me being me, I couldn't stop at making just any old ripple cake…

Daring Bakers: Filled Pâté à Choux Swans

This month's Daring Bakers Challenge filled me with excitement the second it was posted. Kat of The Bobwhites was our August 2012 Daring Baker hostess who inspired us to have fun in creating pâté à choux shapes, filled with crème pâtissiére or Chantilly cream. We were encouraged to create swans or any shape we wanted and to go crazy with filling flavors allowing our creativity to go wild!

For me, there was no choice other than swans. I have been wanting to make these for a while but never found the excuse. What a perfect excuse this was.

Watermelon Truffles

I've often heard people say that anything that tastes great isn't good for you. I disagree: fruit is one of my favourite things in the world, and some fruit in particular to me taste better than any sweet imaginable. Watermellon is one of those things.

It's not watermelon season here in Australia at the moment so there's no lovely fresh, local watermelon in the stores at the moment. In lieu of being able to sink my teeth into those, I created some truffles inspired by one of my favourite food items in the world.

These truffles may taste nothing like watermellon, but the aesthetic is enough to tide me over until summer arrives.

Jye’s Christening Cake

My cousin Jessica is one of my most supportive family members when it comes to my baking adventures, as well as my most regular commissioner. A few of them have been for her son. You may remember the Baby Shower Cupcakes I made as a gift for her, or the Pirate Dreams cake for his first birthday. So when his Christening rolled around, she again asked me to make a cake for the occasion. I was more than happy to oblige. 

But before we launch into the final product, there is a story of drama and tears. This cake almost didn't happen.
