Cook Book Challenge: Week 7

For this week's challenge I baked from Murdoch Book's "Bake It".

This one was a gift from my boyfriend's brother and sister in law a while ago. It's your typical baking book with a difference: most of the recipes have some sort of twist from the old classics. This usually involves use of spices or various substitutes for flour, like polenta or semolina. They're definitely not your typical ingredients-you'll-find-in-your-cupboard type recipes, but they are nice to try something new! There are some ginger cupcakes I've been wanting to do for ages, which I was planning to do this week. But I haven't found time to grocery shop, so had no cream. So I've gone for the choc fudge cookie sandwiches instead.

No one can say no to chocolate, right?

I made one change, however. If they're going to be cookie sandwiches, they'd better look like sandwiches! So I shaped the dough into a loaf or bread-ish shape before slicing the log.

So lets just pretend they actually look like sandwiches.

Cocolate Fudge Sandwiches

Ingredients

250g (9 oz/2 cups) Plain flour
30g (1 oz/ 1/4 cup) unsweetend cocoa
200g (7oz) butter, chilled and diced
100g (3.5 oz) icing sugar
2 egg yolks, lightly beaten
1 tsp vanilla extract

Filling
100g (3.5 oz) dark chocolate, chopped
1 tbsp golden syrup or dark corn syrup
25g (1oz) unsalted butter, softened

Method

1. Preheat oven to 200°C (400°F). Lightly grease two baking trays [can be left to when you refrigertae dough, really]
2. Sift flour and cocoa powder; rub butter into the misture until it resembles fine breadcrumbs.
3. Sift in icing sugar and stir to combine. using a wooden spoion, gradually stir in eggs yolks and vanilla until a solf dough forms.
4. Transfer dough to a lightly floured surface and shape into a 4 x 6 x 26cm block. Wrap in plastinc and chill for 30 minutes, or until firm.  Cut dough into 5mm slices [should yeild 40-48 slices – make sure you get an even number]. Bake for 10 minutes. Cool on trays for 5 minutes, then transfer to a wre rack to cool.
5. The make filling, melt chocolate over a double boiler; remove from heat and stir in golden syrup and butter until mixture is smooth. Use filling to sandwich biscuits together.
