12 Days of Christmas :: 11 Rudolph Cookies

It wouldn't be Christmas without a certain reindeer. Rudolph and his famous red nose feature here on a batch of peanut butter cookies.

Peanut butter cookies are one of my boyfriend's favourite ever things. When I'm picking his brain for ideas to bake, he usually requests them and I usually ignore him and look for something new. When I finally give in, it rekindles his love for them and he laments my lack of baking them more often. So when I finally decided on baking some rudolph cookies, peanut butter was the obvious choice.

Both he and my sister hovered around this kitchen during baking, sniffing the air and dropping hints like, "Mm, do I smell peanut butter?" and "Smells goooood, what are you baking?" While the cookies were sitting on the trays to cool I had to guard them to prevent some from going missing, and had to fight off both of them and the husky while taking them to be photographed. The moment I said I was done the herd swooped in. Alas, there are few Rudolphs of the original 11 currently left.

Not only are these cookies sister and boyfriend approved, they are also husky approved.

These cookies are super light and fluffy. So when I tried one I made the mistake of holding it by the corner and a large chunk broke off and hit the floor. It took precisely 2 seconds for Tobias to bolt over and gobble up the spoils. Ever since he had that first taste, he's taken to stalking the cookies with this look on his face every time they emerge:

Giving him any of his usual treats will not satiate him. He drops them on the floor and waits for some cookie. 

My entire family have endorsed these cookies. Care to test them on yours?

NB: This recipe will yield more than 11 reindeer: I just made a batch of the cookie dough, used as much as I needed to make the 11 cookies and chilled the rest for use at a later stage. 

Rudolph Cookies

Ingredients

3/4 cup smooth peanut butter
1 1/4 cup brown sugar
1/2 cup butter, room temperature
3 tbsp milk
1 tbsp vanilla essence
1 free range egg
2 cups plain flour
3/4 tsp baking powder
3/4 tsp salt
pretzels, halved
red M&Ms
round chocolate sprinkles

Method

  1. Preheat oven to 180°C. Grease or line a cookie sheet.
  2. Cream peanut butter, sugar and butter until smooth and well combined. Beat in egg, vanilla and milk until just combined. Fold in flour, baking powder and salt. 
  3. Roll heaped teaspoons of dough into blunt teardrop shapes. Place on cookie sheet and press gently with the palm of your hand to flatten.
  4. Bake for 8 minutes, or until just starting to brown. 
  5. Remove cookies from the oven and immediately press in the pretzels, M&Ms and chocolate sprinkles to make the features of Rudolph's face. As the cookie 'sets' the decorations will adhere to the cookie. Allow cookies to cool on the tray for 10 minutes, then transfer to a wire rack to cool completely.
